The name "Canaves" translates from Greek as "wine caves," and understanding this etymology unlocks the entire story of this remarkable hospitality collection. In the 17th century, when Santorini's economy revolved around wine production, families carved deep caves into the volcanic tuff that forms the island's cliffs. The Chaidemenos family owned such caves—labyrinthine spaces tunneling into the caldera's edge, representing generations of agricultural heritage. When the devastating 1956 earthquake struck Santorini, the island faced an uncertain future. In 1985, Yiannis Chaidemenos and his wife Anna made a bold decision: they would convert the family's ancestral wine caves into guest accommodations, preserving the historical structures while creating something entirely new.
